Lemon chicken ciabatta

INGREDIENTS:
Chicken breast per two persons Grated rind of one lemon 1 tsp black ground pepper ½ tsp salt ½ tsp garlic powder Cucumber slices Lettuce Mayonaise Herb of choice (basil or chives) 1 Ciabatta loaf

INSTRUCTIONS:
Sandwich the chicken between a piece of plastic wrap, and beat to flatten.
Make your lemon mix and roll the chicken in it till completely covered.
Use a grill pan if you have one and cook on a high heat till cooked through with alittle olive oil.
Slice the ciabatta through the middle and toast on both sides, or heat in the oven.
lightly spread with some mayonaise
Pile the lettuce, cucumber and fresh herbs on the bread and top with the warm lemon chicken.
Serve: semi open.
