Spiced Fruity Quorn
INGREDIENTS:
1 tablespoon olive oil
1 small onion, chopped
1 garlic clove, crushed
225g Quorn mince
85g dates, chopped
50g toasted almonds
1 teaspoon each of ground (gemalen) coriander, cumin and chilli powder
200g tin chopped tomatoes
100ml tomato puree
2 tbsp. Chopped mint (optional)
INSTRUCTIONS:
Toast almonds by heating gently in oven or frying pan for 5 minutes.
Heat olive oil in pan and fry onion till soft.
Add garlic and Quorn mince and fry for a further 2 mins.
Stir in dates, almonds and spices and cook for 3 mins more.
Add tomatoes and puree and bring to boil.
Cover and simmer for 10 mins.
Season with salt and pepper.
Garnish with mint and serve with rice.
