Killer chocolate cake
INGREDIENTS:
225g flour
50g cocoa
1 teaspoon baking soda
Pinch salt
275g sugar
100g butter
150ml buttermilk
2 eggs
3 tablespoons of blackcurrant, strawberry , forestfruits or rasberry jam
10g butter
175g soft light brown sugar
25g cocoa
5 tablespoons milk
250g icing sugar
INSTRUCTIONS:
Sift flour, cocoa, baking soda and salt into a bowl.
Cream sugar and butter until light nd fluffy.
Work the dry ingredients an milk alternatly into the butter mixture.
Finally add the eggs alittle a time and beat well.
Bake at 180 C, gas 4 for 35 minutes.
Put the butter, cocoa and sugar into a pan to melt.
Bring to the boil and boil for 2 minutes.
Stir in the milk, stirring all the time and bring back to the boil.
Sift the icing sugar into a bowl and pour the cocoa mixture on, beating well. It should thicken nicely.
Cut the cooled cake through the middle and spread the jam on one half.
Use alittle of the frosting on top of the jam and sandwich the layers together.
Ice the cake by pouring the frosting on top from the centre and let it pour down the sides evenly. It should make an even, smooth layer over the whole cake.

Sophie's comments: If the frosting does not work the first time dont be discouraged....make sure you boil it for 2 mins stiring all the time.
