Lemon and Apple pie
INGREDIENTS:
PASTRY: 350g plain flour 200g cold butter 1 teaspoon salt 1 teaspoon sugar aprox. 70ml ice cold water
FILLING: 100g sugar 2 large apples peeled and grated rind and juice of 1 lemon 50g melted butter 2 eggs
INSTRUCTIONS:
Rub the butter into the flour until it looks like fine bread crumbs Add the salt and sugar, mix in. With a knife gently mix the water in till it begins to bind. Then use your hands to bind it together into a ball.
Put in plastic wrap and pop in the fridge for about 20 mins.
Preheat oven to 200'C. Line your pie dish with the pastry, by rolling it out and then gently folding it in half and then a quarter. You can now easily place it on your dish and unfold it into place.
Beat the eggs with the sugar and lemon juice and rind. Add the melted butter and apples and fold together. Pour into flan case You can make a lattice on top with any left over pastry Bake for 30-40 mins. Take out, allow to cool slightly and enjoy.
