Heavenly Lemon Flan

INGREDIENTS:
225g digestive biscuits
100g butter
600ml thick whipped cream
2 cans sweetened condensed milk
6 lemons juice and rind

INSTRUCTIONS:
Pre-heat oven to 200'C.
Crush the digestives.
Melt the butter and mix well into the biscuit crumbs.
Turn into a spring form tin and press down with the back of a spoon.
Bake for 8 minutes.
Mix together the cream, condensed milk and lemon rind.
Slowly beat in the lemon juice, the mixture should now thicken.
Pour onto cooled biscuit base and chill for at least 3 hours.
When you are ready to serve, release the spring form... and taste heaven on your tongue!
