Lemon Chicken
INGREDIENTS:
Serves 2
2 chicken breast 25g seasoned flour juice of 1 lemon 2 tablespoons soy sauce Alittle olive oil 1 tblspoon vinegar (azijn) 4 tblspoons light brown sugar 3 leeks 1 tblspoon sesame seeds 100g cashew nuts
INSTRUCTIONS:
Cut meat into chunks and toss in seasoned flour Heat olive oil in pan and toast sesame seeds for 2 minutes. Add soy sauce, vinegar and sugar. Add a splash of water and bring to boil. Add chopped leeks and continue to cook till leeks are softened.This should only take afew minutes. Throw in cashew nuts and mix in. Serve immediatly with Basmati rice.
