Apple Slice
INGREDIENTS:
390g flour 2 teaspoons baking powder 175g butter 175g sugar 2eggs 4 apples cored,pealed and sliced 25g light brown sugar 25g each currants and raisins 25g flaked almonds.
INSTRUCTIONS:
Sift the flour and baking powder together. Add the sugar. Chop the butter into small cubes and rub it into the dry ingredients with fingertips until mixture resembles fine breadcrumbs. Add the sliced apples and stir in the beaten eggs. Add enough milk to make a stiff batter. Do not worry, it should look lumpy, take care not to over stir the mixture because you will beat the air out! Put into a greased tin or one lined with baking paper. Mix the flaked almonds,brown sugar, raisins and currants together and sprinkle over the top. Bake at 180 C for about 50 mins. When golden brown remove from oven and devour while warm!!
