Apple sauce roll

INGREDIENTS:
3 eggs
165 g sugar
125 ml apple sauce
85 g raisins
150 g self-raising flour
½ teaspoon baking powder
½ teaspoon cinnamon
55 g extra sugar

Citrus Cream Filling
125 g cream cheese
40 g icing sugar
2 teaspoons finely grated orange rind
2 tablespoons cream

INSTRUCTIONS:
Grease and line a swiss roll pan.
Beat eggs till thick and creamy.
Add sugar abit at a time, beating between each addition.
Fold in apple sauce, raisins, flour, baking powder and cinnamon.
Spread into baking tin and bake for 20 mins at 180 C.
While baking, prepare a piece of baking paper and sprinkle with sugar.
When cake is ready turn straight out onto the paper.
Remove the paper that the cake cooked on.
Taking the short side of the cake, and pulling the paper as you roll, roll it up slowly and leave for 2 minutes.
Now unroll it and leave to cool.
Meanwhile make your cream.
Beat the cream cheese in a bowl till fluffy.
Add all other ingredients, mixing well to finish the filling.
When the cake is cooled, spread citrus cream evenly over cake and re-roll.
Refrigerate for about 30 mins before serving.
