INGREDIENTS:
275g-350g chicken breast
salt and pepper
2 tablespoond sesame oil
1 onion, chopped
1 red pepper, sliced
2 courgettes, sliced
2 tblsp soy sauce
1 mango, peeled and sliced
1 banana, sliced
200g bean sprouts
150g cashew nuts
INSTRUCTIONS:
Thinly slice the chicken and season with salt and pepper.
Fry quickly in the hot oil until sealed on both sides.
Add onion, pepper, courgettes and soy sauce and stir fry for about 10 mins.
Add mango, banana and bean sprouts and fry for a further 5 mins.
Stir in the cashews and serve with noodles, pasta or rice.
