Taco Salad

INGREDIENTS:
400g minced beef
1 teaspoon chilli powder
1 tin tomato puree
1 tsp dried chilli flakes or 1 pkt taco seasoning
2 garlic cloves
1 tin kidney beans, undrained
Iceburg lettuce, shredded
2 chopped tomatoes
250g grated cheese
1 red/yellow pepper
Tortilla chips
optional: guacamole or sour cream

INSTRUCTIONS:
Put the shredded lettuce in a large serving bowl
Fry meat with chilli powder, drain off excess fat.
Add tomato puree and taco seasoning, kidney beans and garlic.
Allow to simmer for about 5 mins.
Cover the lettuce with the meat mixture.
Put tomatoes, onion, peppers and cheese on top and serve with tortilla chips and salsa.

Sophie's comments: alternatly you can finish with a handful of chips, sprinkle cheese over and put under a hot grill till cheese is slightly melted. Serve with extra chips and salsa.
