Crunchy salad

INGREDIENTS:
150g thinly shredded white cabbage
2 stalks celery, chopped
1 1/2 apples chopped in chenks
1 small onion finely chopped
100g cashew nuts
1 tblspoon parsley
1 tblspoon mayo
2 tblspoons yoghurt
pepper and salt to taste

INSTRUCTIONS:
marinade the apple and onion in 1 part vinegar to 2 part olive oil for 1 hour
Make the dressing in a screw top jar by combining the parsley, mayo and yoghurt with seasoning.
Finally mix all ingredients together and serve sprinkled with afew saved cashews and some chopped parsley.
