Date and Walnut

INGREDIENTS:
75g butter
175g sugar
1 egg
2 tblspoons vanilla flavouring
50g chopped walnuts
275g plain flour
1 tsp baking powder
225g chopped dates
1 tsp bicarbonate soda
300ml boiling water

INSTRUCTIONS:
Preheat the oven to 190C
Cover the dates and bicarbonate soda with the boiling water and leave to soak
beat the butter and sugar together
Add the egg, vanilla and nuts and mix
Sift the flour and baking powder in and mix well
Finally mix in the dates with alittle of the water to make a dropping consistency: meaning that when you lift a spoonful of mixture up with spoon it drops off within the count of 3!!
Pour into a greased cake tin and bake for 1 hour.
Top with caramel topping and leave to cool
