Lemon Curd

INGREDIENTS:
3 lemons, rind and juice
3 eggs
75g butter
175g sugar

INSTRUCTIONS:
Beat the eggs and srain through a seive
Add the rind and juice af the lemons, butter and sugar and beat together
Microwave on full power for 4 mins, stiring once every minute til thickened
Pour into a glass jar and refridgerate.
keep in fridge
