Chicken en croute

INGREDIENTS:
frozen pastry or made from scratch(see pastry recipe)
2 chicken breasts
2 spring onions
4 good sized mushrooms
3 slices bread
fresh herbs of choice
i beaten egg

INSTRUCTIONS:
Preheat oven to 220 C
roll out a
make the stuffing by putting the spring onions, mushrooms, herbs, bread and 3/4 of the egg in a food processor and mix til well blended.
Take the chicken and lay on some plastic wrap using another piece cover the chicken and beat with a rolling pin to flatten.
Place one breast on the pastry, in the centre,
Top with the stuffing and place remaining chicken on top
Enclose the chicken by folding the pastry up and around to form a parcel
Place sealed down on a greased baking sheet
Brush with reamaining egg and bake for 45 mins until a nice golden brown colour.

Sophie's comments: You can make up your own stuffing by adding other ingredients to the breadcrumbs and egg:
ie.dried dates or apricots, onion and sage, any nuts and raisins, bacon...be daring try your own combo!
