Berry and Pecan Muffins

INGREDIENTS:
200g tin red berries/bosbessen(75g uitlek gewicht)
or 100g berries of choice
50g pecan nuts finely chopped
150g plain flour
1\2 level tblspoon baking powder
1\4 level teaspoon salt
1 egg
40g sugar
110ml milk
50g melted marge
1\2 teaspoon vanilla
Topping:
50g pecan nuts, finely chopped.
25g brown sugar

INSTRUCTIONS:
Pre-heat the oven to 200`C.
Grease the muffin pan well.
Sift the flour, baking powder and salt into a bowl.
Then in a seperate bowl mix together the egg, sugar, milk, melted marge and vanilla.
Now re-sieve the dry ingredients onto the egg mixture.
Take a large metal spoon and fold the dry ingredients carefully into the wet ingredients.
Do not over stir! It will look lumpy, don't worry.
Fold the berries and nuts into the mixture, with minimum stirring.
Spoon in enough mixture to fill each muffin cup.
Top with finely chopped pecan nuts and brown sugar.
Bake for 30 mins until well risen and golden brown.
Allow to cool in tin for 5 mins before taking out.
